Description

Try this creamy dish instead of mashed potatoes to cut back on calories without cutting back on flavor!

Ingredients

1  
medium head cauliflower
3 tablespoons
Parmesan cheese
1⁄4 cup
plain, fat-free Greek yogurt
1⁄2 teaspoon
minced garlic
   
pepper, to taste

Instructions

  1. Fill a large pot with about 2 inches of water. Place over medium heat to boil.
  2. Rinse cauliflower. Remove stem and cut into small florets.
  3. Add cauliflower to pot with boiling water. Cook for about 15 minutes or until very tender. Drain well.
  4. In a blender or food processor, puree cauliflower, yogurt, Parmesan cheese, and garlic until creamy. Don't over-mix. Add pepper to taste.

Notes

Instead of boiling cauliflower on the stove, try steaming it in the microwave in a microwave-safe dish to save time.

I made this dish for my family's Thanksgivng dinner, and they loved it! It turned out a little watery, so next time I make it I'm going to try squeezing out the cauliflower a little with a clean dish towel to get out some of the extra water.
