Try this creamy dish instead of mashed potatoes to cut back on calories without cutting back on flavor!
- Fill a large pot with about 2 inches of water. Place over medium heat to boil.
- Rinse cauliflower. Remove stem and cut into small florets.
- Add cauliflower to pot with boiling water. Cook for about 15 minutes or until very tender. Drain well.
- In a blender or food processor, puree cauliflower, yogurt, Parmesan cheese, and garlic until creamy. Don't over-mix. Add pepper to taste.
Instead of boiling cauliflower on the stove, try steaming it in the microwave in a microwave-safe dish to save time.
