Greens with Beans

This recipe is quick and can easily be made with other ingredients that you have on hand. Collard greens are in season right now, but this dish can really be made with a variety of leafy greens. Kale, spinach, or turnip greens would be a great substitution. You can also substitute the beans in this recipe for black eyed peas or whatever canned beans you have on hand.

Quick tip: If you cannot find fresh greens, try looking in the frozen section. Or get both fresh and frozen greens so that you can make the recipe once this week and again in the coming weeks!
